The great thing about this cheesecake is that it melded so beautifully traditional flavors with Indian organically grown fruit. Personally, I find blueberries available in our markets to be either lacking in flavor or being chock full of preservatives.
The base of this cheesecake is an organic whole wheat cookie base made with organic cane sugar and aluminum free baking powder. The lemon cheesecake is made with coconut milk, agar, cashews and organic cane sugar. The cheesecake is topped with a layer of organic black cherry gelled with agar, sweetened with organic cane sugar and livened up with a touch of rosemary.
